Ed I also need to come back once we get a dry pattern going. I still haven't switched over to Propel. On my next refill I'll be putting in Propel E85

How much more is this set up capable of achieving?
Is this an 80%, 95%, ??% tune?
What gauges are recommend in order to complete the tune?

If we push the tune, I'd estimate this car could do about 340whp. To achieve this, I recommend a boost gauge and an EGT gauge to allow the customer to monitor the engine and allow me to run more aggressive boost and a/f. Without being able to monitor this data, I left the boost and a/f on the conservative side for the fuel and setup to make sure things are nice and safe. I personally don't like to max out a tune blindly.

What kind of power are you making from these kinds of setups? Have you tuned any EJ207's? Care to share a dyno chart?

18psi here and still afraid that it's to much! I guess it matters more on how much power you are putting out then PSI you run?

And there's nothing wrong with doing so.

On a 2.0, yes its fairly conservative. I've run 25-26psi peak on EJ207's with VF turbos with supporting mods and fuel. Remember that max boost levels depend largely on turbo size as well as displacement. On a 2.5l, 24psi is about as much as you can really get out of a VF turbo.

Boost is also just one part of the equation. E85 makes good power by leaning out the mixture, but without an EGT gauge to verify safe temperatures, I don't feel comfortable running the car that lean.

18psi is VERY mild for E85... of course it all depends on the rest of the setup and the goals for the car.
