Car Info: 02 PSM WRX
It seems like most people here @ I club like the Eibach springs and KYB XKG struts for WRX's but Im not sure about them on a 00 2.5 RS. I have SPT (Eibach) springs with stock struts on my 02 WRX and I am very happy with them. Another place to check out suspension parts is @ http://www.whiteline.com.au/
Also make sure to allign the car after the install and you may need camber fix in the rear. I got my camber bolt kit from Whiteline and it shiped pretty quick.
Good luck.
