You can look into the Skip Barber schools that are run at Lime Rock, the quality of instruction is very high and you use their cars, but they are rather expensive if you go for the full program.
If you're on a budget get in touch with the local car clubs that run their own private track schools where you use your own car. These will cost much less and the instruction is still excellent, in fact many of the club instructors have professional school and racing experience. Examples- NASA, BMWCCA, SCCA.
