usually a medium-drying solvent, like the one from Production, works well to remove the bird****, and of course a clay bar with lubricant will work too.
as has been said, the acids in the bird**** eat into the paint. most times I've seen this damage, wet sanding can't help it, as it's gone too deep, the clearcoat is cracked, and you start to see damage to the paint below.
using a good quality polymer paint sealant, like sealtek ACR from Blue Coral, every 3-5 washes, will help your paint resist damage from sap and bird****.

For your roof:
Medium-drying solvent on a soft cotton towel, and followed by a damp soft cotton towel. Try to use your fingernail through the solvent towel to pick it off the paint.
For the windsheild, use a razorblade and some medium-drying solvent, or some fine steel wool and LOTS of windex.

I manage a hand carwash and detail center in Walnut Creek, called Autopia.
We buy our detailing and wash chemicals and products from Production and Blue Coral.
If you'd like, I can find out how much a small can/bottle of the solvent costs.
PM me if you'd like to bring your car by, I could put some solvent on your car for you.
I don't know if it's available in retail.
Claymagic and Mothers have good clay products.
Be very careful when using clay. You need to follow directions well, esp. if you intend to re-use the claybar. The bars need to be refrigerated if they are to be re-used.
