yo I know you are going with the wifey, but you shoud, head over to The Gun Store (http://www.thegunstorelasvegas.com/). Its an indoor range where you can fire real firearms ranging from an UZI, to an AK-47, to a revolver! Sounds pretty crazy but cmon, its Vegas!!!

Shows - The only one I liked was Blue Man Group and the Star Trek Experience was pretty fun.
Food - There's a Brazillian Steakhouse in the Rio that one's pretty damned awesome...that and the Steakhouse in the Hotel you're staying at are pretty good. That's all I can remember right now that stood out a lot. Pretty much all the restaurants are good though. Also went to this restaurant in the Flamingo that was outstanding...it overlooked the marketplace that has the shops with "Hawaiian" stuff.
Hotels/Casinos - I prefer the MGM Grand which is where I usually stay as the blackjack and roulette tables are nicer to me there . I also like Caesar's Palace for the shopping area and the huge Cheesecake Factory as well as the Bellagio for the decor. You have to at least walk through the Venetian (take the boatride) and the Paris. You can leave New York, Mandalay Bay, the Castle one and the Luxor alone...those were boring for me.
Oh and if you miss Zippy's Chili or Spam Musubi you can get them at the California Hotel.
There's also a outlet mall 5 minutes from the strip and a good lap dance place at the far end of the strip going inwards towards town.

Go-Cart Racing, 15min outside of Vegas there is small race track. Actually theres four tracks. 1st is for child and parent (fun and mellow), 2nd is for older kids (more turns), 3rd is for 13-up (slippery track), 4th adults only w/ drivers license (you can track your time). You can go to any of the tracks within 1hr, 15min.
Good fun!

I've always wanted to try those Gondola's at the Venetian, just for the hell of it. And as for the Paris Hotel, I proposed to my wife in November of 2006 on top of the Eiffel Tower. I'm pretty sure we'll check it out again......just for memories.
Ahhhh lap dance. I don't even want to get started. Maybe I'll pm you for the location....hahaha, just kidding.

Thanks Dan, I think I know which one you're talking about. Can you see that place off the side of the Freeway? I know I went to one a long time ago with Jayden and it was pretty fun. I want to say it was called Scandia or something like that?!?! Sound familiar? Did they have like miniature golf and an arcade? Might be the same place I'm thinking of.
Also, theres a (wrx/sti) meet on Friday (I think it was 8:00am) at the In and Out Burger drive-in (this was last year). Its right on the out skirts of Vegas, you can see it (the In and Out Burger sign) from the freeway.

I think its a different place, its solely go-cart. Inside theres like a Chucky Cheese arcade w/ food and bathroom. Outside you have the four tracks (pretty good size).

I can also recommend the Gun Store, I've been there twice. Pretty cool to shoot an MP5, like we always see on TV. It's easy to find, about 3 miles east of the MGM on Tropicana. If you're thinking about going, find one of those racks of tourist flyers and look for the Gun Store flyer - it's good for a decent discount.
My co-worker recently went to Vegas and said that there is a booth near the Coca Cola shop (a block north of the MGM) that sells half-price show tickets. The catch is that the show is that night, they're trying to get rid of tickets to fill up the show. So, if you are not picky about what you see (that is, if you don't go to Vegas so often that you've seen all the shows), that might be a good place to look.
Also, I don't know how much of an Island boy you are, but if you haven't seen snow, there might still be snow up at Mt. Charleston when you are there. I know we caught it snowing in January, and there was a significant amount still on the ground one March, but it's hit or miss. You can check the Las Vegas Ski and Snowboard resort site to check the conditions. If nothing else, you and the wife can play in the snow and hang out at the Mt. Charleston lodge, sit around the fireplace. Mt. Charleston is only about 45 minutes north of Las Vegas, so it's an easy drive.
As for amusement parks, there really aren't any except for Adventue Dome at Circus Circus which is more for kids. There are a couple of roller coasters on the strip, like the one at New York New York, but Vegas has gone back to its "adult playground" roots. Wet and Wild is gone, as is the theme park at the MGM. The best roller coaster nearby is at Primm, but that one is closed from around October to March or April. Your wife might still want to go out there for the outlet mall, but that's about all there is.
Finally, if you are an outdoorsy person, you HAVE to see the Bass Pro Shop at the Silverton Hotel. It's a humongous shop, full of outdoor gear - it's so big that they have boats for sale in there. The Silverton is just south of the airport, across the freeway from that outlet mall that used to be called Belz.
Please, feel free to PM if you have any questions.
