Enough of this thread!!!! I'm training for an event about the equivalent of a triathlon and every day I read this damn thread and want to go immediately to Popeyes. You're all ruining my life.

Hell no, southern batter only please. And in the south, Popeyes have a spice called Cajun Magic that no where else gets and it'll blow your face off.

You could make it yourself, I'll get you the recipe. The trick is in the spices, you've got to use cayenne and you have to batter them twice.

No, cayenne is the pepper used to make tabasco. You can get it anywhere. Mix flour, some salt, black pepper and cayenne together. Then get a bowl of milk and a bowl of eggs. Dip the chicken in the eggs then the flour then the milk then flour again. This puts and extra thick layer of batter that makes a good crust and leaves the inside meat really juicy.
Then next part is debatable. The best chicken I've ever had was fried in melted shortening with a little bit of bacon grease. Some people use only oil. Toss them in and be patient and flip if you must. The trick is to have to touch them as little as possible. Take them out and let them sit for a few minutes. Remember, they're still cooking even after you take them out.
There you have it.
