Stock ECU learn capabilities

I was wondering if anyone knows technically how the stock ECU learns from driving habits. How does it respond to mods after being reset? What factors does it consider in making timing and a/f adjustments. What else changes with time? If my mods increase boost, will the ECU then regulate my boost back to stock levels after reset?
