Are there many WRX and STI in the local pick n pull junk yards?

Yeah, the prices are definitely on the high side. The flip-side is that they've got almost any part you could want.

That's because they have to take the thing apart. It isn't worth the time/money for them to dig out small bits. I've had to buy assemblies to get parts I wanted before. It happens.

I wouldn't deal with that Rancho Cordova wrecking yard... they sold me some 02 tail lights that didn't work and had spider cracks on the edges that weren't noticeable in the pictures.

Ive delt with the place in Ranch a few times. Sometimes they are the cheapest, other times they arnt. Really just depends on what you need/looking for.
