Lots of other cultures make foods with blood.
Germans: Blood sausage, aka bludwurst
Chinese: coagulated blood soup, made with cubes of coagulated blood, tripe/intestines, etc.
Filipino: dinuguan, made with pork intestines and blood
British: blood pudding
and the list goes on...
It's quite amusing to see "peasant food" being served in high end restaurants now, dressed up and priced way high, when the whole point of "peasant food" was to not waste a single bit of the animal to begin with.
Frankly, I eat just about anything, balut, dinuguan (i like it with lots of vinegar and hot peppers :9 ), chicken feet (chinese wet style dim sum, not the white, cold style), kitsune don, frogs legs, escargot, lengua, tripe, .. it's all about acquiring the taste and not being afraid to try new stuff

other dishes that may not be appealing but sure is good (in my opinion):
most of them are best served while drinking, with a beer/scotch at hand
sisig (usually side pork, pork brain, pork ears, lemon juice, siling labuyo (small chili peppers), onions, ginger. especially better when served on a sizzling hot plate with egg and chicharon on top)
kilawin (can be goat/beef/fish/pork, spicy with lots of ginger, onions, siling labuyo, soaked in datu puti vinegar)
papaitan (intestines, liver, heart, of goat/pork/beef, and make regular soup out of it. pepper, salt, onions, ginger, with beef broth for flavor. best served really warm!!! usually sort of bitter in taste) good especially after some hard core drinking/while drinking, helps get rid of a headache/hangover

i would like to think of us as just plain tagalogs, but somehow he knew all these dishes...which led me to think that all of his cooking was tagalog.
i know sisig is kapampangan/tagaolog (not sure though)
kilawin is probably all around, my other friend is bisaya and he knows how to make 'em and said that its visayan, same goes for my other friend who's batangenyo
papaitan is actually usually made whenever they would have a goat or a cow, and take all its edible organs and make soup out of it, kind of like dinuguan, where they use these so food won't go to waste.
but i've been to friends' houses who were tagalogs, ilocanos, cebuanos, bisaya, kapampangan, etc....and i have had these dishes at their parties.
(but i like the kapampangan cooking the best, guess im biased)

oh man.. Datu Puti vinegar... :9 that's GOOD STUFF. Also gotta love the Sukang Maasim. Either with garlic and black pepper makes a great dipping sauce for lumpia :9 .

hey don, do they have puso (rice cooked in woven coconut leaves?) in manila? that stuff is the best with lechon on some banana leaves at the beach.
