I've never ridden in or drove a 08 STI, but I really do not like how it looks. I would go with the 05 STI. 05's are the best looking IMO.
If I were you I would go back to stock, sell your aftermarket stuff, sell the car, use that money and keep an eye out for a cheaper 05 STI from a private seller.

A friend of mine who lives a 1/4 mile up the street has an '08 STi. He was one of the first to buy one, and he is pretty happy with it. He paid MSRP, maybe a bit more I think. His is black on black, the only mod is a DP. He let me drive it once, he even told me to flog it to compare it to mine. It definitely does drive a bit differently, a bit softer, but the interior is much different, and with a soft right foot and a six speed, not to mention the SI drive, you should be capable of decent if not good mileage, if that is a concern.
I have to say that after seeing a couple of '08s lowered and almost HellaFlush, they do look downright good. But it's up to you.

keep your ride man. ive dealt with this "problem" myself when i wanted to trade in for an 07 sti (they were going to give giving me a killer deal on it).
i told myself that it would be a lot more work and money to get my new car up to par with the modding ive done to my existing car.
as for 30K for an 05, no way. if you absolutely need the space, get the 08. it is a pretty sweet ride
