This is critical. I once looked at the dipstick while the car was parked on the roadside. The camber of the road was enough to throw off the level reading.
Another point - don't check imediately after stopping the engine. It takes a few minutes for the oil to drain back into the sump.

Yeah the only thing that concerned me was when you said it was running poopy. I would not be worried about the consumption. I just ensure I check the levels every time I fill my gas tank. If you are really concerned about it have a compression test done.
I dont want to add to your paranoia so I will tell you I burn about a quart every 3k miles on a 30 k motor that has great compression.
